Thai Spicy Basil Fried Rice

 2 TB oil
2 chicken breasts chopped into bite size pieces
5 minced garlic cloves
2 tsp crushed red pepper
1/3 cup sweet Thai basil (I subbed regular dried basil which isn't as sweet and is much stronger so only did 1 TB)
1TB ground ginger or 1 inch grated fresh
1 red pepper sliced
1 green pepper sliced
1 can whole stewed tomatoes
1 chopped onion
handful of shredded carrots
2-3 TB sriracha hot chili sauce
2-3 TB soy sauce
1/2 TB Thai curry sauce
4 slices of cucumber used as garnish
2 cups cooked jasmine rice
2 lime wedges
2 tablespoons and 2 teaspoons cilantro sprigs (optional)
salt and pepper to taste

How to make it
Heat pan to medium-high heat
Add the minced garlic and grated ginger,saute for a few seconds until its fragrant.

Add the chicken with salt and pepper to taste and cook until it's 70% cooked.










Now add sliced onions, bell peppers,tomatoes, carrots, crushed red pepper and basil leaves. Stir fry for 3-4 minutes until veggies are tender but crunchy.
 Then add Thai curry paste,Mix everything until the veggies are coated.
Stir ingredients together then add the cooked rice
 and top with the soy sauce and red chili paste .

 Stir everything together until the sauce is spread evenly over the rice. Add more chili sauce if you like spicy food.

(optional) spice it up with a few dehydrated chillies or a dash of the ground hot chillies
Serve on a plate with a lime, cilantro sprigs, and the cucumber slices as a garnish. I didn't have the garnishes so I put it on top of some mixed greens and it makes it look just as pretty!
